Jujutsu Waza or Randori?

Question
I’ve been taking jujutsu for 4 months now. We are taught plenty of waza but the little things almost seem as though they are passed over,(Blocks, katas,kicks, and strikes) it almost seems as though it’s a womens self defense class (because of all the waza).
I want to advance to another level as i have some training (military vet) and I am able to hold my own during randori. should I be concerned with learning more waza vs the subtleties of the art, and even though I am not corrected very often during a technique should I be worried about advancing to another belt(yellow) or am i just being arrogant of my abilites?

Question about commonly taught martial art styles in the USA
I'm looking to take up the martial arts but I'm not sure which I would like best.

Question about martial arts and self defense..
I prefer a type that is STRICTLY self-defense. I have taken classes in TaiChi before, but I would like to practice something that is a little more "physically energetic" so to speak. However, I have heard that TaiChi is the Grandmaster of Martial Arts. Is this true?
I am looking for something that has a "philisophy" as well as a physical discipline. I do find Aikido very interesting. I guess what I would be looking for would be a "soft" style?

Question on knife carrying in California..
I want to carry a knife of self defense. Can I carry it in my pocket? To make it not concealed, how much of the knife needs to be seen? Is there a limit on size of the blade?
